Quiche mania

Pioneer woman has a recipe for a mean quiche. Although, after making two of her breakfast recipes and looking at pictures of her in her cookbook, I am convinced she doesn't eat any of it.

Tonight's meal was especially fun since I got to use two Christmas gifts from my mom, who is by the way the best gift giver ever! She gave me a beautiful Emile Henry pie dish, which has these wide scalloped sides. The ridiculously high butter content, flakiest, richest, most perfect crust in the world from pioneer woman's yum fest quiche fit into it perfectly.

Now I am thinking about waking up early to walk. There is so much quiche left and I know I am going to be thinking about it when I wake up in the morning.

Spanakopita!

Tonight I made spanakopita. It is vegan, made with tofu seasoned to seem kind of cheese like. It tastes enough like cheese when you are in the midst of the nativity fast:)
I also threw together a bean soup using cheater canned beans...
And we are having rolls from the dough I made on Sunday. Yum town.

I really have been cooking

Although I have failed to post anything in several days, I have produced some kitchen successes. Yesterday I used my newly acquired kitchen-aid mixer :) :)) to make a Buttermilk bread dough. I used some of it to make rolls and froze some for homemade bread later in the week. My adorable middle child just came came in wearing an odd assortment of accessories. He claimed to be a stranded World War II soldier.

Meatloaf and biscuits

Simple Tuesday dinner: meatloaf and homemade biscuits. We also had leftover sweet potato souflee from thanksgiving. I didn't take any pictures of the food because none of it seemed picture worthy. But, I put real butter and drizzles of honey on top of the biscuits before I baked them. That made them super tasty!
I have added a picture of lumberjack baby for cute overload.

Growth spurt baby

I have failed to use my kitchen the past few days. BB is eating constantly and not sleeping much. Combine this with long church services and holidayed out kids and you get an apathetic, exhausted mom. Friday lunch

Well, it is a fasting day and I need some vegan inspiration. No thanksgiving leftovers for us until tomorrow. I am contemplating making homemade tortillas and filling them to make black bean burritos. However, BB (baby Benjamin, or Benjamin bunny) is a little fussy today.


Thank goodness for my moby wrap. BB helped me with lunch by sleeping peacefully in the wrap while I kneaded the tortilla dough.

Beautiful Necessities

This is the first day of making my kitchen my favorite room in the house. I really love to cook but somehow talk myself out of it on a daily basis. This is changing today. As of today, I will endeavor to create one thing from my kitchen for my family to enjoy. Even if it is something simple or small, I want to make sure that I am creating something daily. This morning I am making sweet potato muffins, fried eggs and turkey sausage patties. I hope my family enjoys it.
